I'm looking to start experimenting with with ethical penetration testing (ethical hacking). However, I face an issue that the Mac AirPort Extreme wireless card does not support packet injection. Does anyone know of an external wireless device that is compatible with Mac and supports packet injection?

You need a card or adapter that supports promiscuous mode. Here's the first Google result for searching the adapter you linked plus "promiscuous":
